ARTICHOKE SOUP



Artichokes are low in calories and sodium, have no fat or cholesterol and has a good source of fibre content. An ideal soup for weight loss.

Ingredients:

Artichoke - 3 cups

Spring Onions 1/2 cup

Milk -1 cup

Water -1 cup

Pepper -1 Tsp

Salt -1 Tsp

Cornflour - 1 Tsp

Sugar -1/2 Tsp

Method:

Slice artichoke and boil in water with the spring onions until tender.

 Pass through a seive.

In a sauce pan take the filtered pulp add milk and season with pepper, salt and sugar and boil for a few minutes.

Thicken by adding cornflour mixed with a little milk.

Serve with hot croutons.
