GLAZED FRUIT CAKE

Ingredients:

Flour : 1/2 cup
Sugar : 1/2 cup
Butter : 1/2 cup
Eggs : 2
Baking Powder : 1 teaspoon
Vanilla : 1 teaspoon
Water : 2 teaspoon or more
Salt : 1/4 teaspoon
Glaced Fruits : 3 Tbsps.

Ingredients for Icing:

Butter : 50 gms.
Icing Sugar : 100 gms.
Vanilla : ½ teaspoon

Method:

Cream the butter well.

Add powdered sugar little by little and cream well.

Add vanilla. Sift the flour with baking powder, add the salt.

Add the yokes one by one to the creamed mixture. Creaming well after each addition. Fold in the flour alternately with a stiffy beaten egg white.Add the water and mix well.

Drop into muffin tins. Bake at 175 degrees C for about 15 minutes.

When done remove and cool.

Spread butter Icing on top and sprinkle the glaced fruits on top.
