LETTUCE SOUP

Ingredients:

Lettuce - 2 bunches.

Veg. or mutton stock - 4 cups.

Carrot - 1.

Egg yolk - 1.

Milk -1 cup.

Salt and pepper - To season.

Method:

To the boiling stock add the washed and thinly shredded lettuce leaves and carrot slices .

Boil on low heat for 30 minutes, stirring occasionally.

Season with pepper and salt to taste.

In a bowl beat the egg yolk and milk together and pour over the boiling soup and stir till the yolk of the egg begins to thicken.

Serve at once.

Lettuce aids digestion, promotes liver health and is also associated with reducing the risk of cancer. It is extremely low in calorie content and is very high in water content.
