ONION SOUP

Ingredients:

Chopped onion - 2 cups.

Water - 4 cups.

Butter - 2 Tbsps.

Milk - 1 cup.

Flour - 2 Tbsps.

Salt - To taste.

Spring onions - For garnishing.

Method:

Boil onions in water, till tender and rub through a strainer and take the pulp.

Melt butter and add flour and fry for a minute, add milk little by little and let the sauce to thicken a little.

Stir in onion pulp and just heat till hot, don't let it boil, it will curdle.

Serve with finely chopped spring onions. Pepper will not be needed as onion be itself has a strong flavour.

Onions not only flovour food but has many therapeutic, antibacterial, anitfungal and germicidal properties. It also thins the blood, dissolves blood clots and clears the blood of unhealthy fats.
