CHOCOLATE SOUFFLE

Ingredients:

Milk : 2 Cups
Eggs : 2
Sugar : 7 tablespoons (Keep 1 tsp aside)
Cocoa : 2 tablespoon heaped
Gelatine : 10 gms.
Almonds : a few
Fresh cream : 2 Tbsp.
Vanilla : 1 teaspoon

Method:

Dissolve the gelatine in 1 tablespoon of water and keep aside.

Boil the milk, add cocoa mix well.

Separate the egg whites and the yoke carefully.

Beat the yoke and sugar with a wooden spoon then add the milk mixture(milk and cocoa ).

Mix well and double boil this mixture till it coats the spoon.

Add the gelatine to the custard before taking it off the flame.

Dissolve completely without any lumps and let it cool.

Beat the egg whites stiff, add 1 teaspoon sugar and beat again.

When the custard is half set, fold in gently the egg white.

Add vanilla, fresh cream, chopped nuts and pour the mixture inside a chilled mould.

Chill in fridge till set.
