GINGER COFFEE CAKE:

Ingredients:

Flour : 1 cup
Butter : 1 cup
Sugar : 1 cup
Eggs : 2
Vanilla : 1 teaspoon
Caramel liquid : ¼ cup
Soda : ¼ teaspoon
Baking powder : ½ teaspoon
Ginger powder : 1 teaspoon
Coffee powder : 1 tablespoon
Dates : A few
Cherries : A few

Method:

Cream the butter add the sugar, add the yokes one by one and cream till fluffy.

Sift the flour with soda and baking powder.

Dissolve the coffee in 1 tablespoon of warm water, add this to the creamed mixture and add the vanilla.

Add the stiffly beaten egg whites and the flour alternatively.

Add the caramel syrup the powdered ginger and the finely chopped dates and cherries.

Bake at 150 C for 30 to 40 minutes.
