LEMON SPONGE

Ingredients:

Eggs : 2
Sugar : 1 Cup
Milk : 1 Cup
Lime juice : 3 tablespoon
Lime Rind : ½ teaspoon
Flour : 4 tablespoon
Butter : 1 tablespoon

Method:

Add the butter to the flour, mix it gently with hand till it looks like bread crumbs.

Cream the yolk, sugar and lime juice and when creaming add the lime rind.

Add the flour mixture to it and then the milk.

Beat the egg white stiff, add 1 teaspoon of sugar, beat till stiff again.

Fold it into the batter.

Pour into a greased pie dish and bake in a pan of water at 150C for about 30 minutes.
